Preparation
Fill the base of the moka pot to the bottom of the valve with water. Fill the filter basket with coffee grounds. Level it off with a finger and ensure there are no grounds around the edge of the basket. Otherwise, the pot won’t seal properly.
In a spouted bowl, add 4 teaspoons of sugar.
Heat the moka pot on medium-low heat with the lid up. Spoon out 1 to 1.5 teaspoons of first bit of coffee that comes out and put it in the bowl with the sugar. Close the lid of the moka pot and remove it from the stove.
Beat the sugar and coffee together with a spoon. This will take a few minutes. You can’t “overbeat” it. When the mixture is ready, it should be khaki colored, airy and thick. Add the remaining coffee from the moka pot. Serve in cute little demitasse cups (or whatever you have). Pinkies up!
