Ingredients
- 1 cup Sugar
- 1/2 tsp. Salt
- 1 cup Dark Corn Syrup
- 3 eggs
- 1/2 cup Unsalted Butter
- 1 1/2 tsp. Vanilla
- 2 cups Pecans, chopped
Directions
Prepare unbaked pie shell. Press the edges with fork. Preheat oven to 325. In a saucepan, combine the sugar, salt and dark corn syrup. Simmer until the sugar dissolves. Meanwhile, in a separate bowl, beat eggs until foamy. Remove the saucepan from heat. Stir the butter, vanilla and pecans into the syrup mixture. Add eggs to the pie filling while stirring.
Bake at 325 for 40 minutes or until pie filling is set but just a tiny bit wiggly in the middle.
