Ingredients
- 1/2 cup Granulated Sugar
- 1/3 cup All Purpose Flour
- Dash of Salt
- 4 Eggs Yolks, discard egg whites
- 2 cups Milk
- 2 teaspoons Vanilla Extract
- 1 box Vanilla Wafers
- 5 to 6 Ripe Bananas, sliced
Preparation
Line the bottom of a pretty dish with vanilla wafers. Alternate layers of banana slices and wafer. According to Papa, you MUST make sure the vanilla wafers are upside down. “It helps the pudding get in all the crevices.”
In the top of a double boiler, combine sugar, flour, salt, egg yolks and milk. Cook uncovered, stirring constantly until thickened. Remove from heat and add vanilla extract.
Pour the pudding over the banana slices and wafers. Let sit at room temperature if serving the same day. Chill in the refrigerator, if there are any leftovers…
