Ingredients
- 2 Chicken Breasts
- 1 can Black Beans, rinsed
- 1 can Corn, drained (may substitute 1 bag Frozen Corn)
- 1 can Rotel (temperature of choice)
- 1 tablespoon Chili Powder
- 1 teaspoon Onion Powder
- 1 package Ranch Dressing Mix
- 8 ounces Cream Cheese (no difference in taste if you use light)
Preparation
Place raw chicken breasts in the bottom of the slow cooker. Pour in black beans, corn, and rotel. Sprinkle the spices over the top of the veggies and stir. Set block of cream cheese on the top and cook on low for 6 to 8 hours. When cooking is complete and you are ready to eat, use 2 forks to shred the chicken. Stir in the cream cheese and enjoy with some tortilla chips.
